For the Crust:
- 1 lb boneless, skinless chicken breast, sliced into strips
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha
- 1 teaspoon brown sugar
- 1 teaspoon grated ginger
- 2 cups cooked white rice
- 2 green onions, sliced
- 1 teaspoon sesame seeds
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and grated ginger, stir for 30 seconds until fragrant.
- Add sliced bell peppers and stir-fry for 3-4 minutes until slightly tender.
- In a small bowl, mix soy sauce, rice vinegar, sriracha, and brown sugar; pour over chicken and peppers.
- Cook for 2-3 minutes, stirring until sauce thickens and coats the ingredients.
- Serve hot over cooked rice, garnished with green onions and sesame seeds.
