Description

A quick and flavorful stir-fry featuring tender chicken, crisp bell peppers, and a spicy garlic sauce, served over fluffy rice.

For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha
  • 1 teaspoon brown sugar
  • 1 teaspoon grated ginger
  • 2 cups cooked white rice
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and grated ginger, stir for 30 seconds until fragrant.
  4. Add sliced bell peppers and stir-fry for 3-4 minutes until slightly tender.
  5. In a small bowl, mix soy sauce, rice vinegar, sriracha, and brown sugar; pour over chicken and peppers.
  6. Cook for 2-3 minutes, stirring until sauce thickens and coats the ingredients.
  7. Serve hot over cooked rice, garnished with green onions and sesame seeds.
