For the Crust:
- 2 cups shredded cooked chicken
- 1 cup roasted Hatch chilies, chopped
- 1 cup shredded Monterey Jack cheese
- 8 small flour tortillas
- 1/2 cup sour cream
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a bowl, mix shredded chicken, Hatch chilies, cheese, cumin, garlic powder, salt, and pepper until combined.
- Lay a tortilla flat, spread a spoonful of sour cream, then add a portion of the chicken mixture along the center.
- Roll the tortilla tightly around the filling and secure with a toothpick if needed.
- Heat oil in a skillet over medium-high heat and fry each roll until golden and crispy, about 2-3 minutes per side.
- Drain on paper towels and serve warm with extra sour cream or salsa.
