Description

Crispy, rolled tortillas filled with shredded chicken, roasted Hatch chilies, and melted cheese, perfect for a spicy appetizer or main dish.


Ingredients

For the Crust:

  • 2 cups shredded cooked chicken
  • 1 cup roasted Hatch chilies, chopped
  • 1 cup shredded Monterey Jack cheese
  • 8 small flour tortillas
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a bowl, mix shredded chicken, Hatch chilies, cheese, cumin, garlic powder, salt, and pepper until combined.
  2. Lay a tortilla flat, spread a spoonful of sour cream, then add a portion of the chicken mixture along the center.
  3. Roll the tortilla tightly around the filling and secure with a toothpick if needed.
  4. Heat oil in a skillet over medium-high heat and fry each roll until golden and crispy, about 2-3 minutes per side.
  5. Drain on paper towels and serve warm with extra sour cream or salsa.
