Sweet meets heat in vibrant layers of mango and sweet potato, creating a colorful and flavorful dish.

For the Crust:

  • 2 large sweet potatoes, peeled and sliced into rounds
  • 2 ripe mangoes, peeled and diced
  • 1 red chili, finely chopped
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, cumin, smoked paprika, salt, and black pepper. Arrange on a baking sheet in a single layer and roast for 20-25 minutes until tender.
  2. In a bowl, combine diced mango, red chili, lime juice, and half of the chopped cilantro. Mix gently to combine.
  3. Layer roasted sweet potato rounds with the spicy mango mixture on serving plates. Garnish with remaining cilantro and serve warm.
