A bold fusion pizza combining Mexican flavors with a crispy crust, topped with spicy chorizo, crumbly cotija cheese, and finished with cool sour cream, fresh cilantro, and crunchy toasted pine nuts.

For the Crust:
- 1 pre-made pizza dough (12-inch)
- 1/2 lb Mexican chorizo, casing removed
- 1 cup refried beans
- 1 cup shredded Monterey Jack cheese
- 1/2 cup crumbled cotija cheese
- 1/4 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 2 tbsp pine nuts, toasted
- 1/2 red onion, thinly sliced
- 1 jalapeño, sliced (optional for extra heat)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
Instructions
1. Prepare the Crust:
- Preheat oven to 450°F (230°C). Roll out pizza dough on a floured surface to a 12-inch round and place on a baking sheet or pizza stone.
- In a skillet over medium heat, cook chorizo until browned and crumbled, about 5-7 minutes. Drain excess fat and set aside.
- Spread refried beans evenly over the pizza dough, leaving a small border. Sprinkle cooked chorizo, red onion, and jalapeño (if using) over the beans.
- Top with Monterey Jack cheese and cotija cheese. Drizzle with olive oil and sprinkle with chili powder and cumin.
- Bake for 12-15 minutes, until crust is golden and cheese is bubbly. Remove from oven and let cool for 2-3 minutes.
- Drizzle with sour cream, sprinkle with cilantro and toasted pine nuts. Slice and serve immediately.
