For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup chopped spinach (fresh or thawed frozen)
- 1 cup canned artichoke hearts, drained and chopped
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken for 3-4 minutes per side until golden. Transfer to the baking dish.
- In a mixing bowl, combine spinach, artichoke hearts, cream cheese, sour cream, Parmesan, garlic, and Italian seasoning. Mix until smooth and well blended.
- Spread the spinach-artichoke mixture evenly over the chicken breasts in the baking dish. Top with shredded mozzarella cheese.
- Bake uncovered for 25-30 minutes, until chicken is cooked through and cheese is bubbly and golden. Let rest for 5 minutes before serving.
