For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a bowl, mix together spinach, cream cheese, Parmesan, garlic, Italian seasoning, salt, and pepper until well combined.
- Cut a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and cream cheese mixture, then secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Sprinkle mozzarella cheese over the chicken, then transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until chicken is cooked through and cheese is melted and bubbly.
