For the Crust:
- 1 large head garlic
- 2 tbsp olive oil
- 16 oz fresh spinach
- 8 oz feta cheese, crumbled
- 1 cup ricotta cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 30 minutes until soft and golden.
- While garlic roasts, heat remaining olive oil in a large pan over medium heat. Add spinach in batches, cooking until wilted. Drain excess liquid and let cool.
- In a bowl, combine ricotta, eggs, crumbled feta, Parmesan, oregano, pepper, and salt. Squeeze roasted garlic cloves into the mixture and stir until smooth.
- Squeeze excess moisture from spinach and fold into the cheese mixture. Transfer to a greased baking dish.
- Bake for 25–30 minutes until set and lightly browned on top. Let cool slightly before serving.
