Description

A comforting, savory bake with creamy spinach, tangy feta, and sweet roasted garlic, perfect as a side or light main dish.

For the Crust:

  • 1 large head garlic
  • 2 tablespoons olive oil
  • 16 oz fresh spinach
  • 8 oz feta cheese, crumbled
  • 1 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30 minutes until soft.
  2. While garlic roasts, heat remaining olive oil in a large pan, add spinach in batches, and cook until wilted. Drain and squeeze out excess liquid.
  3. In a bowl, combine roasted garlic (squeezed from skins), spinach, feta, sour cream, Parmesan, eggs, pepper, and nutmeg. Mix well.
  4. Transfer mixture to a greased baking dish and bake for 25-30 minutes until golden and set.

Notes

You can customize the seasonings to taste.
