For the Crust:
- 1 large head garlic
- 2 tablespoons olive oil
- 16 oz fresh spinach
- 8 oz feta cheese, crumbled
- 1 cup sour cream
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30 minutes until soft.
- While garlic roasts, heat remaining olive oil in a large pan, add spinach in batches, and cook until wilted. Drain and squeeze out excess liquid.
- In a bowl, combine roasted garlic (squeezed from skins), spinach, feta, sour cream, Parmesan, eggs, pepper, and nutmeg. Mix well.
- Transfer mixture to a greased baking dish and bake for 25-30 minutes until golden and set.
