Description

These delicious spinach ricotta bites make a perfect appetizer or snack, combining creamy ricotta with nutritious spinach in a bite-sized treat.

For the Crust:

  • 1 cup ricotta cheese
  • 1 cup chopped spinach, cooked and drained
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, egg, salt, and black pepper until well combined.
  3. Spoon tablespoon-sized portions of the mixture onto the prepared baking sheet. Sprinkle breadcrumbs over each portion and slightly flatten them.
  4. Bake in the preheated oven for about 15-20 minutes, or until the bites are golden brown and firm to the touch.
