For the Crust:
- 1 cup ricotta cheese
- 1 cup chopped spinach, cooked and drained
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
Instructions
1. Prepare the Crust:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.
- In a large bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, egg, salt, and black pepper until well combined.
- Spoon tablespoon-sized portions of the mixture onto the prepared baking sheet. Sprinkle breadcrumbs over each portion and slightly flatten them.
- Bake in the preheated oven for about 15-20 minutes, or until the bites are golden brown and firm to the touch.
