For the Crust:
- 4 large sweet potatoes
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley leaves
- 1 garlic clove
- Juice of 1 lemon
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Pierce each sweet potato a few times with a fork and place on a baking sheet. Bake for 30-35 minutes or until tender.
- In a medium bowl, combine ricotta, chopped spinach, olive oil, salt, and pepper. Mix until well combined.
- In a blender, combine basil, parsley, garlic, lemon juice, and a pinch of salt. Blend until smooth to make the herb drizzle. Once the potatoes are done, cut open, stuff with the ricotta mixture, and finish with a drizzle of herb sauce before serving.
