A wholesome and flavorful dish featuring roasted sweet potatoes stuffed with a creamy spinach and ricotta filling, topped with a vibrant herb drizzle.

For the Crust:

  • 4 medium sweet potatoes
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup fresh basil
  • 1/4 cup fresh parsley
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  2. While potatoes bake, mix ricotta, spinach, Parmesan, garlic, salt, and pepper in a bowl.
  3. Once potatoes are cool enough to handle, slice open and scoop out some flesh, mixing it into the ricotta filling.
  4. Stuff each potato with the filling and return to oven for 10 minutes.
  5. For the herb drizzle, blend olive oil, basil, parsley, and lemon juice until smooth.
  6. Drizzle over stuffed potatoes before serving.

Notes

You can customize the seasonings to taste.
