Description

A hearty and healthy vegetarian bake combining fresh spinach, tender zucchini, and protein-rich chickpeas in a savory tomato sauce, topped with melted cheese.


Ingredients

For the Crust:

  • 2 medium zucchinis, sliced
  • 2 cups fresh spinach
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a large bowl, combine zucchini slices, spinach, chickpeas, marinara sauce, oregano, garlic powder, salt, and pepper. Mix well.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. Sprinkle mozzarella and Parmesan cheese over the top.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  6. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
