A savory and slightly sweet chicken dish with tender broccoli and fluffy rice, coated in a sticky garlic-soy glaze.

For the Crust:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 cup white rice, uncooked
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1/2 tsp black pepper
- 1 tsp cornstarch mixed with 1 tbsp water
- Green onions, sliced for garnish
Instructions
1. Prepare the Crust:
- Cook the rice according to package instructions and set aside.
- In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, and black pepper to make the sauce.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned, about 5-7 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour the sauce over the chicken, stir to coat, and simmer for 3-4 minutes.
- Add the cornstarch slurry to the skillet and stir until the sauce thickens and becomes sticky.
- Steam or blanch the broccoli florets until tender-crisp, then add to the skillet and toss with the chicken and sauce.
- Serve the sticky garlic soy chicken and broccoli over the cooked rice, garnished with sliced green onions.
