A fruity, creamy, and low-sugar breakfast bake featuring fresh strawberries and protein-rich cottage cheese.

For the Crust:

  • 2 cups low-fat cottage cheese
  • 1 cup fresh strawberries, sliced
  • 3 large eggs
  • 1/4 cup almond flour
  • 1 tsp vanilla extract
  • 1 tbsp honey or sugar-free sweetener
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a large bowl, mix cottage cheese, eggs, almond flour, vanilla, sweetener, cinnamon, and salt until smooth.
  3. Gently fold in sliced strawberries, then pour mixture into the prepared baking dish.
  4. Bake for 30 minutes or until set and lightly golden on top.
  5. Let cool slightly before serving warm.
