For the Crust:
- 2 cups low-fat cottage cheese
- 1 cup fresh strawberries, sliced
- 3 large eggs
- 1/4 cup almond flour
- 1 tsp vanilla extract
- 1 tbsp honey or sugar-free sweetener
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- In a large bowl, mix cottage cheese, eggs, almond flour, vanilla, sweetener, cinnamon, and salt until smooth.
- Gently fold in sliced strawberries, then pour mixture into the prepared baking dish.
- Bake for 30 minutes or until set and lightly golden on top.
- Let cool slightly before serving warm.
