For the Crust:

  • 2 cups cottage cheese
  • 2 cups fresh strawberries, sliced
  • 3 large eggs
  • 1/4 cup almond flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, mix cottage cheese, eggs, almond flour, vanilla, honey (if using), cinnamon, and salt until well combined.
  3. Gently fold in sliced strawberries, then pour the mixture into the prepared baking dish.
  4. Bake for 25-30 minutes, or until the top is golden and the center is set. Let cool slightly before serving.
