For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup strawberry jam
- Additional powdered sugar for rolling
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in almond extract.
- Gradually add flour and salt, mixing until a soft dough forms.
- Take a tablespoon of dough, flatten slightly, and place 1/2 teaspoon strawberry jam in the center. Wrap dough around jam, sealing completely, and roll into a ball.
- Place cookies 2 inches apart on baking sheets. Bake for 12-15 minutes, until bottoms are lightly golden.
- Let cookies cool for 5 minutes, then roll in powdered sugar while still warm. Cool completely and roll again in powdered sugar before serving.
