Soft, protein-packed breakfast cookies bursting with fresh strawberries, zesty lemon, and ripe banana, made healthier with cottage cheese and oats.

For the Crust:

  • 1 cup old-fashioned rolled oats
  • 1 ripe banana, mashed
  • 1/2 cup cottage cheese
  • 1/2 cup fresh strawberries, diced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed banana, cottage cheese, honey, lemon zest, and vanilla extract until smooth.
  3. Stir in oats, baking powder, and salt until well combined, then gently fold in diced strawberries.
  4. Scoop about 2 tablespoons of dough per cookie onto the baking sheet, flattening slightly with a spoon.
  5. Bake for 18-20 minutes until edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
