For the Crust:
- 1 cup old-fashioned rolled oats
- 1 ripe banana, mashed
- 1/2 cup cottage cheese
- 1/2 cup fresh strawberries, diced
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed banana, cottage cheese, honey, lemon zest, and vanilla extract until smooth.
- Stir in oats, baking powder, and salt until well combined, then gently fold in diced strawberries.
- Scoop about 2 tablespoons of dough per cookie onto the baking sheet, flattening slightly with a spoon.
- Bake for 18-20 minutes until edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
