Description

Fluffy, protein-packed, and refreshing airy cake with a melt-in-your-mouth texture and natural sweetness from strawberries and lemon.


Ingredients

For the Crust:

  • 2 cups low-fat cottage cheese
  • 3 large eggs, separated
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Zest and juice of 1 lemon
  • 1 cup fresh strawberries, diced
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C) and line an 8-inch springform pan with parchment paper.
  2. In a blender, combine cottage cheese, egg yolks, honey, vanilla, lemon zest, and lemon juice. Blend until smooth.
  3. In a separate bowl, beat egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold the cottage cheese mixture into the egg whites, then fold in almond flour, baking powder, and diced strawberries.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until the top is golden and set.
  6. Let cool completely before slicing and serving.
