For the Crust:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup diced fresh strawberries
- 1 cup crushed pineapple, drained
- 1/4 cup whole milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Combine flour, baking powder, and salt; gradually mix into the butter mixture. Fold in strawberries, pineapple, and milk until just combined.
- Pour batter into prepared pan. Bake for 60-70 minutes, or until a toothpick inserted comes out clean. Cool in pan for 15 minutes, then transfer to a wire rack.
