A light and airy strawberry mousse that’s soft as a whisper and sweet as a first kiss.

For the Crust:
- 1 lb fresh strawberries, hulled
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 cup heavy cream, cold
- 1 packet unflavored gelatin
- 1/4 cup cold water
- Whipped cream and fresh mint for garnish (optional)
Instructions
1. Prepare the Crust:
- Puree strawberries, sugar, and lemon juice in a blender until smooth. Strain to remove seeds if desired.
- Sprinkle gelatin over cold water in a small bowl. Let sit 5 minutes, then microwave for 15 seconds or until dissolved. Stir into strawberry puree.
- Whip the cold heavy cream until stiff peaks form. Gently fold the strawberry mixture into the whipped cream until fully combined.
- Divide the mousse among serving glasses and refrigerate for at least 2 hours, or until set. Garnish with whipped cream and mint before serving.
