Description

A light and airy strawberry mousse that’s soft as a whisper and sweet as a first kiss.


Ingredients

For the Crust:

  • 1 lb fresh strawberries, hulled
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 cup heavy cream, cold
  • 1 packet unflavored gelatin
  • 1/4 cup cold water
  • Whipped cream and fresh mint for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Puree strawberries, sugar, and lemon juice in a blender until smooth. Strain to remove seeds if desired.
  2. Sprinkle gelatin over cold water in a small bowl. Let sit 5 minutes, then microwave for 15 seconds or until dissolved. Stir into strawberry puree.
  3. Whip the cold heavy cream until stiff peaks form. Gently fold the strawberry mixture into the whipped cream until fully combined.
  4. Divide the mousse among serving glasses and refrigerate for at least 2 hours, or until set. Garnish with whipped cream and mint before serving.

Notes

You can customize the seasonings to taste.
