For the Crust:
- 24 large cremini mushrooms, stems removed and reserved
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 2 tablespoons olive oil
- 1/4 cup cream cheese, softened
- 1 teaspoon dried parsley
- Salt and black pepper to taste
- Fresh rosemary sprigs for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Finely chop the reserved mushroom stems. In a skillet, heat olive oil over medium heat. Sauté chopped stems, onion, and garlic until softened, about 5 minutes.
- In a bowl, combine the sautéed mixture, breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper. Mix until well combined.
- Fill each mushroom cap with the stuffing mixture, mounding slightly. Arrange the stuffed mushrooms in a circle on the baking sheet to form a wreath.
- Bake for 20-25 minutes, until mushrooms are tender and tops are golden. Garnish with fresh rosemary sprigs before serving.
