Description

A hearty and nutritious dish featuring baked sweet potatoes stuffed with a savory mix of spinach, mushrooms, avocado, and tangy feta cheese.

For the Crust:

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and bake for 45-50 minutes or until tender.
  2. Heat olive oil in a skillet over medium heat. Add mushrooms and cook until softened, about 5 minutes. Add spinach and cook until wilted, about 2 minutes. Season with salt, pepper, garlic powder, and smoked paprika.
  3. Slice baked sweet potatoes open and fluff the insides with a fork. Top with the mushroom and spinach mixture, diced avocado, and crumbled feta cheese. Serve warm.
