For the Crust:
- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1 avocado, diced
- 1/2 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C) and bake sweet potatoes for 25-30 minutes until tender.
- Heat olive oil in a pan over medium heat, add mushrooms, and cook for 5 minutes. Add spinach and cook until wilted.
- Cut sweet potatoes in half, scoop out a portion of the flesh, and mix it with spinach, mushrooms, avocado, and feta cheese. Stuff the mixture back into the potato skins.
