Description

A hearty and nutritious meal featuring baked sweet potatoes stuffed with a savory mixture of spinach, mushrooms, creamy avocado, and tangy feta cheese.

For the Crust:

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and bake for 45-50 minutes or until tender.
  2. While potatoes bake, heat olive oil in a skillet over medium heat. Add mushrooms and cook until softened, about 5 minutes.
  3. Add spinach to the skillet and cook until wilted. Stir in garlic powder, salt, and pepper. Remove from heat and mix in diced avocado and feta cheese.
  4. Slice each baked sweet potato open and fluff the insides with a fork. Spoon the spinach, mushroom, avocado, and feta mixture over the top.
  5. Garnish with fresh parsley and serve warm.

You can customize the seasonings to taste.
