Description

A vibrant and satisfying dish featuring roasted sweet potatoes stuffed with a savory mixture of spinach, avocado, mushrooms, and tangy feta cheese.

For the Crust:

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, rub with 1 tablespoon olive oil, and bake for 45-60 minutes until tender.
  2. While potatoes bake, heat remaining olive oil in a skillet over medium heat. Add mushrooms and garlic, sauté until mushrooms are browned.
  3. Add spinach to the skillet and cook until wilted. Season with smoked paprika, salt, and pepper.
  4. Slice open baked sweet potatoes and fluff the insides with a fork. Top with the mushroom-spinach mixture, diced avocado, and crumbled feta.
  5. Garnish with fresh parsley and serve warm.
