A wholesome and savory dish featuring roasted sweet potatoes stuffed with a flavorful mixture of caramelized onions, wilted spinach, and creamy goat cheese.

For the Crust:

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 4 cups fresh spinach
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and roast for 45-50 minutes or until tender.
  2. While sweet potatoes roast, heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
  3. Add spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in balsamic vinegar, garlic powder, salt, and pepper. Remove from heat.
  4. Slice each roasted sweet potato open lengthwise and fluff the insides with a fork. Spoon the onion and spinach mixture over each potato, then top with crumbled goat cheese and fresh thyme if desired.
