For the Crust:

  • 8 lamb cutlets (about 1 inch thick)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Crust:

  1. Season the lamb cutlets generously on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the lamb cutlets and sear for 3-4 minutes per side, or until browned and cooked to your desired doneness. Remove from the skillet and set aside on a plate.
  3. Reduce the heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in honey, soy sauce, lemon juice, and thyme leaves. Bring the sauce to a simmer and cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  5. Return the lamb cutlets to the skillet, spooning the glaze over them. Cook for an additional 1-2 minutes to warm through and coat evenly.
  6. Transfer the lamb cutlets to a serving platter, drizzle with any remaining glaze from the skillet, and garnish with fresh parsley. Serve immediately.
