For the Crust:
- 1 cup sun-dried tomatoes, chopped
- 1 cup crumbled feta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Oil for frying
- 4 burger buns
- 1 cup tzatziki sauce
Instructions
1. Prepare the Crust:
- In a large bowl, combine sun-dried tomatoes, feta cheese, spinach, breadcrumbs, eggs, garlic, oregano, salt, and pepper. Mix well to form a thick mixture.
- Divide the mixture into 4 equal portions and shape them into burger patties.
- Heat oil in a skillet over medium heat. Cook patties for about 5 minutes on each side, until golden brown and cooked through.
- Toast the burger buns lightly. Assemble the burgers by placing each patty on a bun and topping with tzatziki sauce.
- Serve immediately with your favorite side.
