Description

A gourmet twist on the classic grilled cheese sandwich, featuring creamy ricotta, tangy sun-dried tomatoes, and fresh spinach on golden, buttery bread.

For the Crust:

  • 8 slices sourdough bread
  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ricotta, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
  2. Spread the ricotta mixture evenly on 4 slices of bread. Top with fresh spinach and shredded mozzarella.
  3. Place the remaining 4 slices of bread on top to form sandwiches.
  4. Butter the outside of each sandwich generously.
  5. Heat a skillet or griddle over medium heat. Cook each sandwich for 3-4 minutes per side, until golden brown and cheese is melted.
  6. Remove from heat, let cool slightly, then slice and serve warm.

Notes

You can customize the seasonings to taste.
