A gourmet twist on the classic grilled cheese sandwich, featuring creamy ricotta, tangy sun-dried tomatoes, and fresh spinach on golden, buttery bread.

For the Crust:
- 8 slices sourdough bread
- 1 cup ricotta cheese
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter, softened
- 1 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, mix ricotta, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
- Spread the ricotta mixture evenly on 4 slices of bread. Top with fresh spinach and shredded mozzarella.
- Place the remaining 4 slices of bread on top to form sandwiches.
- Butter the outside of each sandwich generously.
- Heat a skillet or griddle over medium heat. Cook each sandwich for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
