For the Crust:
- 4 slices of sourdough bread
- 1 cup ricotta cheese
- 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 cup fresh spinach leaves
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter (softened)
- 1 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, mix ricotta cheese, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
- Spread the ricotta mixture evenly on two slices of bread. Top with fresh spinach leaves and shredded mozzarella. Place the remaining bread slices on top to form sandwiches.
- Spread softened butter on the outer sides of each sandwich.
- Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from heat, let cool for a minute, then slice and serve warm.
