For the Crust:
- 8 slices whole-grain bread
- 4 tablespoons sun-dried tomato pesto
- 1 cup fresh spinach leaves
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Butter, for grilling
Instructions
1. Prepare the Crust:
- Spread 1 tablespoon of sun-dried tomato pesto on one side of each slice of bread.
- Layer spinach, ricotta, and mozzarella cheese onto the pesto side of 4 bread slices, then top with the remaining slices, pesto side down.
- In a skillet over medium heat, melt enough butter to coat the pan. Grill each sandwich until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
