For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon and orange zest.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk and citrus juices, mixing until just combined.
  4. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  5. Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over cooled cake and garnish with additional citrus zest if desired.

You can customize the seasonings to taste.
