For the Crust:
- 1 lb ground beef or turkey
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 orange, zested and juiced
- 1 lime, zested and juiced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) diced tomatoes
- 1 cup heavy cream or coconut cream
- 2 tbsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust for heat)
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground meat over medium heat until cooked through. Drain excess fat if needed.
- Add diced onion and minced garlic to the pot. Sauté until softened, about 5 minutes.
- Stir in chili powder, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
- Add black beans, diced tomatoes, orange zest, orange juice, lime zest, and lime juice. Bring to a simmer.
- Reduce heat to low and stir in heavy cream. Let it simmer gently for 20-25 minutes, allowing flavors to meld and heat to build slowly.
- Season with salt and black pepper. Garnish with fresh cilantro before serving.
