A glossy burst of sweet, spicy, and salty delight. Jammy candy-like cherry tomatoes paired with creamy whipped feta.


Ingredients

For the Crust:

  • 1 lb cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tsp red pepper flakes
  • 2 cloves garlic, minced
  • 8 oz feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Toss cherry tomatoes with olive oil, honey, red pepper flakes, garlic, salt, and pepper. Roast for 20-25 minutes until jammy.
  2. In a food processor, blend feta, Greek yogurt, and lemon juice until smooth and creamy. Adjust seasoning if needed.
  3. Spread whipped feta on a serving plate, top with roasted tomatoes, and garnish with fresh basil. Serve with crusty bread.

You can customize the seasonings to taste.
