For the Crust:
- 1 lb cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp honey
- 1/2 tsp red pepper flakes
- 2 cloves garlic, minced
- 8 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- Fresh basil for garnish
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Toss cherry tomatoes with olive oil, honey, red pepper flakes, garlic, salt, and pepper. Roast for 20-25 minutes until jammy.
- In a food processor, blend feta, Greek yogurt, and lemon juice until smooth and creamy. Adjust seasoning if needed.
- Spread whipped feta on a serving plate, top with roasted tomatoes, and garnish with fresh basil. Serve with crusty bread.
