For the Crust:
- 1 large sweet potato, peeled and cubed
- 1 baguette, sliced into 1/2-inch pieces
- 4 oz blue cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly browned.
- Arrange baguette slices on a baking sheet, brush with remaining olive oil, and toast in the oven for 5-7 minutes until golden and crisp.
- Mash the roasted sweet potato and spread a generous layer onto each toasted baguette slice. Top with crumbled blue cheese, a drizzle of honey, and a sprinkle of fresh thyme. Serve warm.
