Description

A delightful appetizer combining the sweetness of roasted sweet potatoes with the tanginess of blue cheese on crisp crostini.


Ingredients

For the Crust:

  • 2 medium sweet potatoes, peeled and sliced
  • 1 baguette, sliced into 1/2 inch rounds
  • 4 oz crumbled blue cheese

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Arrange sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until tender.
  2. Place baguette slices on another baking sheet and toast in the oven for about 5 minutes until slightly golden.
  3. Top each crostini with a sweet potato slice and a sprinkle of blue cheese. Return to the oven for 5 more minutes until the cheese is just melted.

Notes

You can customize the seasonings to taste.
