For the Crust:
- 2 medium sweet potatoes, peeled and sliced
- 1 baguette, sliced into 1/2 inch rounds
- 4 oz crumbled blue cheese
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Arrange sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until tender.
- Place baguette slices on another baking sheet and toast in the oven for about 5 minutes until slightly golden.
- Top each crostini with a sweet potato slice and a sprinkle of blue cheese. Return to the oven for 5 more minutes until the cheese is just melted.
