Crispy sweet potato cups filled with melted brie and topped with a sweet-tart raspberry honey glaze.

For the Crust:
- 2 medium sweet potatoes, peeled and grated
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 ounces brie cheese, rind removed and cut into small cubes
- 1/2 cup fresh raspberries
- 2 tablespoons honey
- 1 teaspoon fresh lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a mini muffin tin.
- In a bowl, mix grated sweet potato, olive oil, salt, and pepper. Press mixture into muffin cups to form small cups.
- Bake for 20 minutes until edges are crisp. Remove from oven.
- Place a cube of brie into each sweet potato cup. Return to oven for 5-7 minutes until cheese is melted.
- Meanwhile, mash raspberries with honey and lemon juice in a small saucepan. Simmer for 3-4 minutes until slightly thickened.
- Drizzle raspberry honey glaze over brie bites before serving.
