Description

Crispy sweet potato cups filled with melted brie and topped with a sweet-tart raspberry honey glaze.


Ingredients

For the Crust:

  • 2 medium sweet potatoes, peeled and grated
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup fresh raspberries
  • 2 tablespoons honey
  • 1 teaspoon fresh lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin.
  2. In a bowl, mix grated sweet potato, olive oil, salt, and pepper. Press mixture into muffin cups to form small cups.
  3. Bake for 20 minutes until edges are crisp. Remove from oven.
  4. Place a cube of brie into each sweet potato cup. Return to oven for 5-7 minutes until cheese is melted.
  5. Meanwhile, mash raspberries with honey and lemon juice in a small saucepan. Simmer for 3-4 minutes until slightly thickened.
  6. Drizzle raspberry honey glaze over brie bites before serving.

Notes

You can customize the seasonings to taste.
