For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 4 oz brie cheese, sliced into small pieces
- 1/2 cup cranberry sauce
- 1/4 cup pecans, chopped
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly browned.
- Remove from oven and top each round with a slice of brie. Return to oven for 3-5 minutes until brie is melted.
- Top each round with a dollop of cranberry sauce and a sprinkle of chopped pecans. Garnish with fresh thyme and serve warm.
