Description

A festive and elegant appetizer featuring roasted sweet potato rounds topped with creamy brie, tangy cranberry sauce, and crunchy pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 oz brie cheese, sliced into small pieces
  • 1/2 cup cranberry sauce
  • 1/4 cup pecans, chopped
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly browned.
  3. Remove from oven and top each round with a slice of brie. Return to oven for 3-5 minutes until brie is melted.
  4. Top each round with a dollop of cranberry sauce and a sprinkle of chopped pecans. Garnish with fresh thyme and serve warm.

Notes

You can customize the seasonings to taste.
