A festive appetizer featuring creamy sweet potato and melted brie on toasted baguette slices, topped with a sweet and crunchy cranberry-walnut mixture.

For the Crust:
- 1 large sweet potato, peeled and cubed
- 1 baguette, sliced into 1/2-inch rounds
- 8 oz brie cheese, sliced
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper, then roast for 20 minutes or until tender. Mash lightly.
- Arrange baguette slices on a baking sheet and toast for 5-7 minutes until crisp and golden.
- Top each crostini with mashed sweet potato and a slice of brie. Return to oven for 3-5 minutes until brie is melted.
- In a small bowl, mix cranberries, walnuts, honey, and thyme. Spoon over crostini.
- Serve warm, garnished with extra thyme if desired.
