A festive and elegant appetizer featuring roasted sweet potato rounds topped with melted brie, crunchy walnuts, and a sweet-tart cranberry-honey glaze.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz brie cheese, rind removed and sliced
  • 1/2 cup walnuts, chopped and toasted
  • 1/2 cup cranberry sauce
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  2. While potatoes roast, prepare the glaze: In a small saucepan, combine cranberry sauce, honey, and balsamic vinegar. Heat over medium, stirring until smooth and slightly thickened, about 5 minutes. Set aside.
  3. Top each sweet potato round with a slice of brie. Return to oven for 3-5 minutes until cheese is melted. Drizzle with cranberry-honey glaze, sprinkle with toasted walnuts, and garnish with fresh thyme before serving.
