For the Crust:
- 2 large sweet potatoes, peeled and thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 8 ounces burrata cheese, drained
- Fresh basil leaves for garnish
- Balsamic glaze for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a round baking dish or oven-safe skillet.
- In a bowl, toss sweet potato slices with olive oil, thyme, garlic powder, salt, and pepper until evenly coated.
- Arrange slices in overlapping concentric circles in the dish, starting from the center and working outward to form a rose shape.
- Bake for 25-30 minutes until sweet potatoes are tender and edges are lightly browned.
- Remove from oven and place burrata in the center of the rose. Return to oven for 3-5 minutes to warm the cheese.
- Garnish with fresh basil and drizzle with balsamic glaze before serving.
