For the Crust:
- 2 large sweet potatoes, halved lengthwise
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 8 oz burrata cheese
- 2 tbsp hot honey
- 1 tbsp chopped fresh parsley
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Brush sweet potato halves with olive oil and season with salt, pepper, and smoked paprika. Place cut-side down on baking sheet.
- Roast for 25-30 minutes until tender. Remove from oven and let cool slightly.
- Turn potatoes cut-side up. Gently place burrata pieces on each half.
- Drizzle with hot honey and sprinkle with parsley and red pepper flakes if using.
- Serve immediately while warm.
