For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1/4 cup dried cranberries, chopped
  • 1 tablespoon honey
  • 1/4 cup chopped pecans
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. In a small bowl, mix cream cheese, dried cranberries, and honey until well combined.
  4. Once sweet potato rounds are cooked, let cool slightly. Top each round with a dollop of the cream cheese mixture.
  5. Sprinkle with chopped pecans and fresh thyme leaves before serving.
