For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces cream cheese, softened
- 1/4 cup dried cranberries, chopped
- 1 tablespoon honey
- 1/4 cup chopped pecans
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- In a small bowl, mix cream cheese, dried cranberries, and honey until well combined.
- Once sweet potato rounds are cooked, let cool slightly. Top each round with a dollop of the cream cheese mixture.
- Sprinkle with chopped pecans and fresh thyme leaves before serving.
