- 2 tablespoons chopped fresh parsley
- 1 tablespoon honey (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- Warm cranberry jelly in a small saucepan over low heat until spreadable.
- Top each sweet potato round with a dollop of cranberry jelly, then sprinkle with feta crumbles and parsley. Drizzle with honey if desired.
- Serve warm as an appetizer or side dish.
