For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cranberry jelly
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon honey (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  4. Warm cranberry jelly in a small saucepan over low heat until spreadable.
  5. Top each sweet potato round with a dollop of cranberry jelly, then sprinkle with feta crumbles and parsley. Drizzle with honey if desired.
  6. Serve warm as an appetizer or side dish.
