Description

A delightful appetizer featuring roasted sweet potato slices topped with creamy honey-infused feta and crunchy toasted walnuts.

For the Crust:

  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons honey
  • 1/4 cup walnuts, toasted and roughly chopped
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Arrange sweet potato rounds on a baking sheet, brush with olive oil, and season with smoked paprika, salt, and pepper.
  2. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. In a small bowl, mix feta cheese with honey until well combined.
  4. Top each sweet potato round with a spoonful of honeyed feta, sprinkle with toasted walnuts, and garnish with fresh thyme.
