- 2 medium sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 ounces feta cheese, crumbled
- 2 tablespoons honey
- 1/4 cup walnuts, toasted and roughly chopped
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Arrange sweet potato rounds on a baking sheet, brush with olive oil, and season with smoked paprika, salt, and pepper.
- Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- In a small bowl, mix feta cheese with honey until well combined.
- Top each sweet potato round with a spoonful of honeyed feta, sprinkle with toasted walnuts, and garnish with fresh thyme.
