For the Crust:
- 2 large sweet potatoes
- 1 cup crumbled feta cheese
- 1/4 cup heavy cream
- 2 tablespoons honey
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Slice sweet potatoes into 1/4 inch rounds.
- Arrange sweet potato slices on a baking sheet and bake for 20-25 minutes, until tender.
- In a bowl, combine feta cheese and heavy cream; whip until smooth. Top each sweet potato slice with whipped feta and drizzle with honey.
