For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- While potatoes roast, prepare the glaze: In a small saucepan, combine cranberries, honey, and balsamic vinegar. Heat over low, stirring until cranberries soften and mixture thickens slightly (about 5 minutes).
- Remove sweet potatoes from oven. Top each round with feta, walnuts, and a drizzle of the cranberry-honey glaze. Garnish with fresh thyme before serving.
