A delightful appetizer or side dish featuring roasted sweet potato rounds topped with tangy feta, crunchy walnuts, and a sweet-tart cranberry-honey glaze.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. While potatoes roast, prepare the glaze: In a small saucepan, combine cranberries, honey, and balsamic vinegar. Heat over low, stirring until cranberries soften and mixture thickens slightly (about 5 minutes).
  4. Remove sweet potatoes from oven. Top each round with feta, walnuts, and a drizzle of the cranberry-honey glaze. Garnish with fresh thyme before serving.
