For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese, crumbled
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey for drizzling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato slices with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Remove from oven and let cool slightly. Top each slice with crumbled goat cheese, dried cranberries, and chopped pecans.
  4. Return to oven for 3-5 minutes until cheese is slightly softened. Garnish with fresh thyme and a drizzle of honey before serving.
