For the Crust:
- 1 small sweet potato, peeled and thinly sliced
- 1 French baguette, sliced into 1/2-inch pieces
- 4 oz goat cheese, softened
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F. Toss sweet potato slices with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 20 minutes until tender.
- Brush baguette slices with remaining olive oil and toast in the oven for 5-7 minutes until golden.
- Spread goat cheese on each crostini, top with roasted sweet potato slices, drizzle with honey, and sprinkle with fresh thyme.
