For the Crust:
- 2 cups mashed sweet potatoes
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 sheets puff pastry, thawed
- 1 egg, beaten
- 1 tbsp coarse sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix mashed sweet potatoes, brown sugar, cinnamon, nutmeg, and salt until smooth.
- Roll out puff pastry sheets and cut into 4-inch squares. Place a spoonful of filling in the center of each square.
- Fold pastry over filling to form triangles, press edges with a fork to seal, and brush with beaten egg. Sprinkle with coarse sugar.
- Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
